This a meal I make with bits that I have hanging around in the bottom of my fridge or freezer. I always have a chorizo in my fridge as even a cm of one adds a lot of taste and depth to a meal. This time I also had a tiny bit of chicken, some frozen home grown small broad beans, frozen homegrown sweetcorn, a clove of garlic, an onion, a bit of going off green pepper, a cup full of brown rice, some bits of frozen home grown pepper, some tomato puree and some smoked paprika.
This meal is never the same as I use what ever I have in. Sometimes it might have some chilli, small bits of carrot, mushrooms or some peas in it. You can also use fish or tuna instead of the chicken or make it veggie.
I cooked the rice and added the broad beans half way through cooking as I thought they would take longer to cook than the rest of the ingredients. In a frying pan with a tiny bit of oil I cooked the 1 cm of finelt diced chorizo, chopped onion, garlic and chopped green pepper, added the diced chicken and cooked. I then added the frozen veg. A tablespoon of tomato puree, a big splash of water, and 2 tsp of smoked paprika were then added and the mixture was cooked for a few minutes, still leaving it with a bit of wet tomato sauce in it. When the rice was cooked I mixed the sauce mixture and the rice and beans together. You can eat it hot but we had it cold from the fridge. We chose to have it cold due to the hot weather. It serves 4 and this is half of it in the picture.
The salad of lettuce, cucumber, tomatoes and spinach were fresh from the garden with a bit of yellow pepper added.
