I put a hummus recipe on the other day and said that I would post different ways to use up hummus and so here are 10 ways that we make sure that no hummus is thrown away in our house. I only found out the other day that you can actually freeze hummus, and so that is an option too,
- As a dip with warm flat bread and crudités (sliced up veg).
- As a sandwich spread with grated carrot or salad
- Mix hummus with Greek yoghurt, shredded chicken, slices olives, tomatoes and crumbled feta and serve on a bed of lettuce. Sprinkle chopped chives on top. Have for lunch.
- As a pasta salad dressing. I thin it out with a bit more olive oil and water and add more black pepper and then toss warm pasta in it and add some bits of left over chicken and cucumber, onions and warmed frozen peas and corn and it makes a nice lunch.
- I dilute it a bit like I did with the pasta but with lemon juice water and olive oil so that it is a creamy mixture and then toss in the salad.
- I spread it on raw chicken before grilling as it keeps it moist and adds flavour.
- Dilute with chicken stock to make a sauce, add 2 tsp soya sauce and toss some cooked noodles in it topped with spring onions and sesame seeds.
- If making burgers mix some into the mince with cooked onions and herbs to add flavour and help bind them.
- Spread on hot toast
- Hummus pizza. Spread hummus on top of the base or wrap, add cooked peppers and onions (or any veg eg I have used cooked butternut squash) and sprinkle with cheese.
