These burgers that Mr S made were really tasty and we will definitely make them again. He used Jamie Oliver’s recipe but we added some more flour as they would have been very sloppy, and with little texture, without. I guess the amount of flour you need is decided by how large your butternut squash is. We always pick the largest if they are a set price. We used up some Christmas cheese that we got cheap but you can use any hard cheese and we usually use extra strong cheddar
This recipe made 8 burgers and so we have some for next month in the freezer.
RECIPE
2 red onions
3 medium carrots
The top half of a butternut squash
90g hard cheese, (we used up Christmas cheese)
200g flour (Jamie said 150g)
Good pinch of salt
2 tsp ground cumin
2 tsp turmeric
1 to 2 tsp lazy chilli or 1 to 2 fresh chillies
I inch of ginger
2 to 3 tbsp water.
Method
1.Cut the onion fine and grate the butternut squash, carrot, ginger and cheese into a bowl. Mix up.
2. Add the spices and salt and mix again.
3. Add the flour and mix.
4. Add the water until it is the consistency you want to form your burger.
5. Fry in a shallow pan, or air fry.
Mr S made a sauce to go with them by putting a handful of fresh coriander into a pestle and mortar with a pinch of sea salt and grinding it up, and then added 3 dessert spoons of yoghurt to it. I scored some free burger buns from Iceland and so we had 2 burgers instead of making chips, as we had intended. (I only ever buy yellow sticker things from Iceland, and the man in their knows me now and gave me some buns as they had over ordered and had loads left. ) We had fresh spinach from the greenhouse with ours but any salad would be nice.
Hi Toni I was on a course not long back where they replaced flour with creamed crackers which tastes lovely you had to bash them into crumbs though. I think it was a Jamie recipe too .x
That does sound nice. I have used crushed cornflakes instead of flour in some things too
