Savoury Nests from leftovers

We never buy food especially for lunches.  We use what we have in.  Often this means using left overs.  The other day we had a bit of spicy stew left and some mashed potatoes,  There was quite a bit of potato but only enough stew for one small helping.  I therefore made it into the following meal.

Ingredients

Left over mashed potatoes,

Leftover stew, chilli, bolognaise, chicken supreme or what ever you have that is similar left over

2  ounces of grated hard cheese eg. cheddar  (more if wanted)

 

Method

  1.  Mould the mashed potato into nests and place in the fridge for 10 minutes. (I added chives to mine).
  2.  Warm the stew for a couple of minutes in the microwave.
  3.   Put the nests into the air fryer for 2 to 4 minutes, depending how crispy you want them. 200C  air fryer and not bake, I cooked them on a silicone mat.
  4.  Add the stew and then the grated cheese.
  5.   Air fry for another 5 minutes or until the cheese is melted and golden.

    I’ve just found your site. Ive forgotten what I was originally researching! (I think it was asking which catkins are edible?) Anyway have wandered through some of your posts and just want to say a big thank you as I love your ethos about living and life!
    I’m now inspires to use up some of our food leftovers – going to try the mashed potato filled with leftover chilli con carne and top with grated cheese – can’t wait to try! What I like most about your input is you seem to use what I call standard flavour enhancers/herbs etc I do get put off when a recipe calls for the more unusual seasoning/herb etc which seems to me to defeat the whole idea of using up ‘leftovers’. Happy days!

      Aww thanks for your feedback. Yes I always try to use what I have or can grow and use as few ingredients as possible to save money. I hope that your filled potatoes went well. Sorry for the late reply. I have been making the most of the sun.

    These look lovely. I don’t have an air fryer. Have you tried them in the oven?

      I haven’t myself but my friend has done them a few times in a high oven to crisp them up
