We never buy food especially for lunches. We use what we have in. Often this means using left overs. The other day we had a bit of spicy stew left and some mashed potatoes, There was quite a bit of potato but only enough stew for one small helping. I therefore made it into the following meal.
Ingredients
Left over mashed potatoes,
Leftover stew, chilli, bolognaise, chicken supreme or what ever you have that is similar left over
2 ounces of grated hard cheese eg. cheddar (more if wanted)
Method
- Mould the mashed potato into nests and place in the fridge for 10 minutes. (I added chives to mine).
- Warm the stew for a couple of minutes in the microwave.
- Put the nests into the air fryer for 2 to 4 minutes, depending how crispy you want them. 200C air fryer and not bake, I cooked them on a silicone mat.
- Add the stew and then the grated cheese.
- Air fry for another 5 minutes or until the cheese is melted and golden.

I’m now inspires to use up some of our food leftovers – going to try the mashed potato filled with leftover chilli con carne and top with grated cheese – can’t wait to try! What I like most about your input is you seem to use what I call standard flavour enhancers/herbs etc I do get put off when a recipe calls for the more unusual seasoning/herb etc which seems to me to defeat the whole idea of using up ‘leftovers’. Happy days!

These look lovely. I don’t have an air fryer. Have you tried them in the oven?
I haven’t myself but my friend has done them a few times in a high oven to crisp them up
