Key Lime Pie

We have just started to visit a community fridge in a village nearby and this week we received lots of lemons and limes.  As we were having friends to dinner on the Sunday we decided to make Key Lime Pie.  It is easy and quick to make but looks and tastes special.  We made it the night before as it needs to chill for a while.  Our guests loved it.

Ingredients

For the base

300g of ginger biscuits (can use digestive biscuits).

115g butter melted

For the filling

1 can of condensed milk (397g)

3 medium egg yolks

4 limes (juice and zest)

Double cream to decorate (optional)

Method

  1. Preheat the oven to 160C
  2. Whiz the biscuits in a food processor to form crumbs or use a rolling pin in a strong bag to crush them (I use an inner cereal packet if doing it this way).
  3. Mix the melted butter into the biscuit crumbs and line a tart tin.  I used an oblong one but a round 22 cm on can be used.  Make sure that you push the crumbs up the side of the tart tin.
  4. Bake the biscuit base in the oven for about 10 minutes and then take it out to cool.
  5. In a large bowl whisk the egg yolks for about a minute with an electric mixer.
  6. Add the condensed milk and whisk again for 3 more minutes.
  7. Add the juice and finely grated zest of the limes and whisk once more for 3 minutes.
  8. Pour the filling into the base and place in the oven to cook for 15 minutes.
  9. Cool and chill in the fridge for about 8 hours.  We did ours overnight.
  10. We piped some double cream on top.  You can put as much as you want on.  We did not put a lot on as we were serving this with home made ice cream and we wanted to save most of the cream for another meal.
  11. You could decorate on top of the cream with grated chocolate or grated lime zest or just use fruit if you do not have any cream.

    I have ‘given up’ trying to make lemon meringue pie, as I always get a ‘soggy bottom’ ! Ha! This biscuit base however has given me renewed hope that I may make a lovely dessert when my family visit! Thank you for sharing :)

    This is much simpler than the recipe I originally tried – I shall definitely give this a go! Would unsalted butter be ok?

      Yes. I only use unsalted butter. I find simpler recipes more frugal, but just as nice if you use good quality ingredients

    This is the Delia Smith recipe which I have been making for many years. It’s always on request in our house. I’ve used ginger biscuits or digestive biscuits, both are delicious. It’s so cheap to make. I always make a pavlova with the egg whites. Friends think I’m a domestic goddess, little do they know.

      I have never seen the Delia Smith recipe, but I guess they are all based on original recipes from Florida and so might be similar. I get fed up when famous cook writers put a recipe as their own in a book when it is the same recipe that my Gran has made for years. I have just checked and her recipe is similar, but some of my measurements are different, and she puts a cream cheese topping on top. You are right. It is so cheap to make and yet tastes and looks great. You are a domestic Goddess. Anyone who makes an effort in the kitchen is, lol. x
