Sweet and sour kebabs are one of my favourite recipes at the moment. The meat melts in the mouth and they are so tasty. I first made it when we had friends coming round to dinner, but I think that it will be on our monthly menu from now on. This makes enough for 2 people. If you want to stretch it to 4 people you could add other vegetables to the skewers or double the quantities.
We always have pineapple in the freezer. When ever I find a pineapple at a reasonable price I cut it up and portion it up into 4 or 5 bags. One bag has the sliced core and I put this in smoothies. The rest I take out when I need them. This works out cheaper than buying tins of pineapple.
Ingredients.
2 tbsp Oil (I use olive oil or cold pressed rape seed but most oils will do).
1 tbsp Soy sauce
1 small lemon (zest and juice)
1 dessert spoon black treacle
A small chilli (minced or grated)
1 tbsp of dark brown sugar
A thick slice of ginger, minced or chopped very fine
Half a pork fillet (mine cost £3.71 for a whole one). Chicken can be used.
A tin or fresh pineapple.

Method
- Make the marinade in a small bowl or container, preferably not plastic, by mixing all the ingredients together
- Slice the half fillet of pork and place it into the marinade.
- Leave in the fridge with a lid on so that the pork can soak in the marinade for 4 to 6 hours (or overnight)
- Fold the pork over in two as you place it onto the skewers and thread a a piece of pineapple on alternatively to the pork. Other veg like green pepper can be added to reduce cost but I like the pineapple juices to run into the meat.
- Cook the sweet and sour kebabs on a grill, BBQ or in an air fryer for about between 5 and 10 minutes, turning mid way through cooking, or until the meat is cooked. I used a meat thermometer to check but they don’t need long. If they are being cooked on a BBQ the marinade can be used to baste the kebabs so that they do not go dry.
Sweet and Sour pork kebabs are nice served with rice and stir fry, or salad and chips or lemon cous cous. They are so quick to make. We prepare the pork and the marinade in the morning and quickly make them for a meal when we return.

I haven’t made kebabs for years I’ve made Turkey steaks kebabs & made meat balls & threaded those on to kebabs with what ever veg I have to use. X
