Air fryer quick, cheap, quiche

So many people tell me that they can not cook from scratch because they do not have time, don’t have enough money, or it is too much bother.  Here is a cheap, quick meal that I have made for breakfast to serve with beans for the two of us, for lunch with salad, have made it as a main, or to take for a packed lunch.  It literally takes a couple of minutes to prepare, and 6 minutes to cook.  This can serve one or two people.  It is also quite healthy.

Ingredients

1 wrap

2 eggs

a splash of milk (less than in a cup of tea)

Fridge gravel (I used a bit of dried out cheese, a few tomatoes, a top from a spring onion, a small sausage, some dried mixed herbs).

Salt and pepper to season

An air fryer

 

Method

  1. Prepare your fridge gravel ie grate cheese if using and slice vegetables
  2. Put the wrap in the dish or container that you are using,
  3. Mix the eggs in a cup, add a splash of milk, and season with the salt and pepper
  4. Space the fridge gravel in the bottom of the quiche. If using cheese I put it in the bottom, first.
  5. Pour the mixed liquid intocthe wrap carefully.
  6. Cook in the air fryer at 180C for 6 to  7 minutes, or until cooked in the middle. I put a tiny slit in the top of the quiche and press either side to see if liquid comes out. It is cooked if nothing oozed out.

We probably make this about 3 times a month.  It is usually when we have got back late from somewhere or when we want a quick, filling, breakfast as we are out for the day.  Anything can be added that you would add to a quiche.  A few spoons full of cottage cheese makes it a bit more luxurious.

This can also be cooked in an oven. I made one the other day to fill the oven up.
