Bean salad.

I like to have a substantial salad as part of my summer meals. I am also trying to increase my protein as I age. A few people have asked me for the recipe  of my bean salad that I posted in a recent picture, and so I am posting it  here.

I didn’t have the amount of tomatoes and cucumber as stated, and so I swapped in some radish. We also didn’t have a red onion and so I used a shallot. I think chopped peppers would be nice to add, too. Maybe defrosted sweetcorn as well? Use what you have, basically, to keep costs down.

Ingredients

Vinegarette

1/4 cup olive oil

1/4 lemon juice.

1 grated glove of garlic

1/2 tsp salt.black pepper to taste.

Salad.

Tin of chickpeas

Tin of mixed beans in water

1/2 cucumber

1/2 cup of halved mini tomatoes

1 red onion diced,

Handful of chopped parsley.

Feta cheese crumbled (optional)

Olives (optional)

Method

Make the vinegarette by putting all the ingredients into a bowl and whisking to emulsify it.

Drain the tins and mix your chopped salad ingredients together in a separate bowl (except the feta and the olives), and then toss in the vinegarette.

Sprinkle the feta or olives over the top before serving.

Store leftovers in the fridge. Ours served two of us 3 meals each as a side dish, and kept for 3 days in a glass box.

This was delicious to get out of the fridge on a hot, sunny day.

    I’m definitely going to try this & I like the idea of feta cheese I have some in my freezer that needs using up .I’m guessing you could add any squeezed fruit or chopped fruit too . Thank you x

      Yes I can’t see why not. Good idea. It will be nice with fruit in. The dressing will probably need to be acidic to emulsify.
