At them moment we are not doing any food shopping for 2 to 3 weeks. I have an annual food budget and we have plenty of food in the house and so I will shop from the cupboards except for milk. We some times like beans for our breakfast or for lunch. We only had two tins in the cupboard and so we stretched one of them to give us 2 breakfasts each. The other one will be stretched for a couple of lunches. To do this we literally bulk them out with other ingredients that we have in the fridge. This serves 2
Ingredients
half a tin of beans
1 onion
Any bits from the fridge (I had a couple of wizened bits of pepper. When we have courgettes or tomatoes growing we will add a bit of those, or a bit of spinach and spring onions).
1 tbsp tomato puree
herbs or chilli powder ) optional
Oil to cook.
Method
- Lightly fry the onion and other other vegetables.
- Add the water and the tomato puree and stir
- Cook until vegetables are soft..
- Add the half tin of beans.
- Add more water (and/or tomato puree) if needed to make a sauce that looks like the one in a tin of beans and heat through for a minute
- Add herbs or chilli powder if used. Serve
We serve this on toast, with wild garlic potato cakes, or over a baked potato. It is a good way of using up fridge gravel, or items growing in the garden. Mr S likes an egg with his but I just have it how it is.
