Apple Chutney

I have never made apple chutney before but I thought that it would be nice with our home made sausages, in a toastie with cheese, or in a pork mince burger.  We have foraged lots of apples this week and so I apologise in advance as there may be lots of apple recipes in the future as I find ways to use  them up.  I have stored some apples wrapped in newspaper in a cardboard box in a cool place.  This recipe made 5 small jars.

Ingredients

750g apples (weight when chopped and cored)

1 large onions (finely chopped or grated)

350ml of white or cider vinegar

150g of dried sultanas

1 chilli or 1/4 chilli flakes

1/2 tsp salt

1 tsp ground ginger

250g of sugar (soft brown is best but any will do.)

Method

  1. Put 1/4 of the vinegar into a saucepan, add the onion and simmer until it is almost soft.
  2. Add the apples, dried fruit, ginger, salt and just enough vinegar  to cover them.
  3. Cook gently with the lid on until the fruit is soft.  It will need stirring now and again (takes about 15 mins).
  4. Add the rest of the vinegar and stir in the sugar
  5.  Once the sugar has dissolved boil the mixture with the lid off until the chutney is thick (10 to 15 minutes).
  6. Add the chutney to hot sterilised jars and seal.
  7. Leave the chutney in a dark, cool cupboard and do not use for a couple of weeks.
  8. Keep in the fridge once opened.

You can actually just dump all of the ingredients in the  pan and cook it for the same amount of time but chutney generally does taste better if you add the vinegar slowly and not all at once.  In the past some of our chutney has languished in the cupboards and we have forgotten to use them .  I will be using this with our ‘pickie lunches’, quiches, as well as with hot food like burgers.  What is your favourite thing to do with chutney?

    //all of the above plus I use a tomato based chutney as a top (crust) for meatloaf before baking and I use a mango or peach chutney when making a ground turkey loaf. Very Yummy

    We are lucky enough to have an apple tree in the garden of our new home. I made apple turn overs, apple and cinnamon cake ( I use a simple vegan recipe that uses sunflower oil and no eggs). You can also male an apple slaw.
    Looking forward to more apple recipes

    CHEESE!!!! Will be making your recipe this coming weekend :-) Beetroot chutney turned out well last Sunday, I was supposed to use dill seeds but already had mustard seeds so substituted. That’s stocking fillers for my customers sorted for the festive season 😋 Regret I blanched and froze all my cauliflower before I thought of piccalilli lol.
