Strawberry and lemon sorbet

We had a glut of strawberries which needed using up. I wanted to preserve them by making something refreshing as we are experiencing some hot, sunny days. My daughter and family are coming for a meal tomorrow night and will have been working all day. I therefore thought that I would make a strawberry and lemon sorbet. I placed the strawberries in the freezer over night so that they were frozen when I made this.

Ingredients

1lb of frozen strawberries

1/4 cup of honey

1/4 cup of lemon juice.

Method

Put all the ingredients into a food processor and whiz until smooth. It took about 3 minutes in mine. Add more honey if it is not sweet enough for you. Mine was fine. Place in a sealed container and freeze. Take it out of the freezer a few minutes before serving.

I will serve my strawberry and lemon sorbet with some home grown berries. It tastes lovely. Another treat made with what we are growing and have in the cupboard. I just might have to put some in my lolly moulds and then cover with chocolate πŸ˜„. If I didn’t have honey, I would probably have added some icing sugar to sweeten it. I am telling myself it is healthy πŸ˜‡.

    Thank you, I’m going to make this for my granddaughter, she can’t seem to tolerate any form of ice cream, she will love this scooped and put into a cone

    I’ve never had much luck growing strawberries so gave it a miss this year. Appears this was the year for strawberries as everyone I know has got a huge glut. However, I’m not going to miss out on this recipe, I’m going to buy some strawberries tomorrow and give your recipe a whirl, it looks delicious and perfect for the current weather.     I don’t grow strawberries, but the suprrmarket was seeling a large pack much reduced and the berries were gorgeous. So, I made this recipe, but my blender wasn’t too happy with the large frozen berries. Next time I will cut the berries before freezing.

      If I am honest I am not sure. I have never made it with cooked fruit.
