Christmas shepherds pie is a great meal to make on Boxing day, or later if you have frozen the leftovers from your Christmas meal. There are no quantaties as you use what you have. We made half a pint of white sauce and into it stirred the following things, diced. All the ingredients need to be already cooked. There was turkey, carrots, sausage stuffing, spring onions, and some fresh cranberries that I had softened in the microwave. I did this by putting them into a bowl, with a bit of water and put a plate on top. They took 3 minutes.You could put some dollops of cranberry sauce in instead if you wanted.
I had some mashed potato already cooked and so I put it on top. It was a mixture of sweet and white potatoes. If you don’t have any potatoes you could make a pie or pasties with this mixture instead. Even a mixture of herbs or bread crumbs on top or sliced potato to make it hot pot style.
We cooked it in the slow cooker for 15 minutes to make sure it was warm. The turkey and the stuffing had been colld when we mixed them in the sauce.
You might want to put sprouts in this, pigs in blankets, peas, sweet corn, or what ever you like. We served it with brocolli and cauliflower as we are using up the Christmas vegetables and things that we got from the community fridge on Christmas eve.
More or less everything was leftovers, but the meal was lovely, and got a big thumbs up from Mr S. We might make it again next month with pulled chicken and a couple of sausages. Sorry I didn’t get any good pictures as I forgot to take them until we were serving it.
