One of our favourite meals is chicken strips in a wrap with salad. These are some thing that we make regularly and these chicken strips make a great, healthy alternative to the McDonalds ones that our children ask for.
We all want our children to eat healthily, and the supermarkets are a mine field now with all the additives. However, our kids want to be like their contemporaries and eat similar food. It is hard been classed as different. Chicken nuggets or chicken strips (goujons) are therefore not off the table for my grandson. These may cost a little bit more than what I can buy frozen in the shops, but the extra money is worth it to me. I know exactly what is in them. There are no chemicals that I can’t pronounce.
I use homemade bread crumbs. Sometimes I spice them up by adding smoked paprika or chilli in the flour or mixed into the bread crumbs. I tend to freeze the strips when cooked, and heat them up in the air fryer when thawed. This recipe makes a big batch, but as you can see from the photos, I make them with whatever amount of chicken I have.

Ingredients
2 large chicken breasts (or 5 chicken thighs boned and skinned).
85g of bread crumbs
Flour to dust.
1 large egg (sometimes I add milk or water to stretch it).
Method
- If using an oven preheat to 200C (I use my air fryer)
- Dice the chicken into small chunks ( nuggets) or strip
- Put the bread crumbs into a bowl or a large bag,
- In another bowl, mix the egg and the milk or water together, and put some flour in the 3rd bowl. A good pinch of salt can be added to the flour if needed.
- Dip each cube or strip of chicken into the flour, and then the egg mixture, and throw into the bag, or bowl.
- Repeat and shake, or move around in the bowl, until the chicken is thoroughly coated with the bread crumbs.

- Place the chicken on to a baking tray and bake for 15 to 20 minutes until golden. I turn them once after about 6 minutes so that both sides are crispy. I usually cook mine in the air fryer unless the oven is on for something else.
- I use a meat thermometer to make sure that the chicken is cooked as I am feeding to a young child.

- Serve or cool for freezing.
- Open freeze on a tray for a few hours before placing them into a bag or container for longer term freezing.
