We had our Christmas early this weekend. My children have to work Christmas day, or visit inlaws. For a change we decided to serve fish as in some countries this is the traditional Christmas food. I am not a fan of turkey dinners, either. One easy thing I made as one of the starters was a smoked salmon pie.
I didn’t invent the pie. I have seen it on a number of reels over the last few months. I can’t remember the content creators, and so apologies to them. The pie was gorgeous and we will definitely make it again as preparation was so quick. The recipe was for 8 people as that is the amount of people I catered for. It can easily be halved to make a smaller one. We were lucky as we bought the smoked salmon with a 50% discount. It freezes ok. This recipe is not a really frugal recipe, but it is reasonably priced for a special dinner party, or occassion. It would be nice on a picnic too.
Ingredients
200g smoked salmon (can use less)
2 rolls of ready made puff pastry
180g of cream cheese.
Dill.
Method.
1. Roll out one lot of pastry on to a lined tray.
2. Spread the cream cheese over the pastry, leaving at least a centimeter border around the edge.
2. Sprinkle with the dill.
3. Place smoked salmon over the top of the cream cheese, keeping the border.
4. Wet the boarder with water.
5. Place the other roll of pastry on top.
6. Using a fork, press down along all of the edges to seal the pie so that there are no leaks. I also used the fork to pierce the top of the pie about 6 times. Egg or milk wash it.

7. Cook in a hot oven about 200⁰C until golden brown. I had mine on a silicone mat but a non stick, greased tray, or parchment could be used. Before taking out of the oven, check underneath to make sure that you don’t have a soggy bottom. Mine took 25 minutes but all ovens are different. 
I served mine just warm, but it can be served hot or cold. I don’t grow dill but I found it in Lidl and M&S. I will give growing it a go next year. My family loved the pie, and are going to make it again for their special occassions. There was one piece left which Mr S ate the next day and said it was just as nice.
I prefere making my own pastry but draw the line at puff pastry as it takes so much time and effort. A lot of supermarket ready roll pastries have palm oil in them. I got mine made with butter from M&S. It did cost more, but tastes better, and is not as harmful to our health. Have you made anything like this?
I haven’t made anything like this but am going to make this when we have our second Christmas day. Do you know if low fat cheese would work or is full fat best? Thank you for the idea.
High fat would be better as will taste better and not run as much when heated, butI would guess that low fat will work as well.
Thank you for that recipe. I love smoked Salmon but it comes in biggish packs for one. This is a great buffet recipe as well.
It would. You can separate the pack of smoked salmon into smaller amounts and freeze for treats for yourself.

I will definately make this. Great that you can make to suit the size you need. I would expect you could use uncooked salmon? Can hardly wait to try. I have not had success growing fill I U.Kbut will try again. I read you should plant it late sutumn from seed, like garlic
