I made this for the first time this week and was really pleasantly suprised. It is easy to make, and tastes like a melt in the mouth shortbread. Mr S loved this cookie tray bake, and I have been asked to make it again.

Ingredients.
175g butter
75g icing sugar
175g plain flour
75g corn flour
Choc chips or dried fruit to taste.(I added a couple of handfuls of chocolate bits)
Method
1. Line an 8 inch square tin (or similar). I just put a small silicone mat at the bottom of the tin.
2. Turn on the oven to 170⁰C
3. In a bowl whisk the butter and icing sugar until it is almost white in colour.
4. Sieve the flour and cornflour into the mixture and work it into the mixture using a spoon and then your hands.
5. Add the chocolate or dried fruit until evenly combined.
6. Put it into the tin and push it to the corners with your hand until it is even.
7. Bake for 30 to 35 minutes until it starts to go slightly golden.
8. Leave in the tin to cool but score with a knife into portions.
6. Cut fully when cool, and store in an airtight tin.

This is definitely one to try. Icing sugar instead of caster sugar, will be interesting how that compares with texture and taste.
It tastes the same but melts in your mouth more.
