I made these for a buffet table recently, and they went down really well. They are a twist on an old classic that my mum made me as a child, and are an easy no bake dessert which make a tasty treat. Crispy biscoff squares are robust and so would be great for a picnic or a lunch box.
I used the Lidl version of biscoff spread and rice krispies as this saved me about £3 and reduced the cost of the bake. Mini marshmallows work best, but larger ones could be cut up and used. Mine were a mixture of pink and white ones and the colour turned out fine. I cut my bake into 20 squares.
Ingredients
50g butter
225g mini marshmalllows.
A jar of biscoff spread
150g of Rice Krispies.
200g white chocolate
Method.
1. Line an 8×8 tin with parchment paper. A slightly larger tin can be used but the base will be thinner.
2. In a large, deep pan put in the butter and the marshmallows, and melt slowly over a low heat, stirring constantly.
3. When melted and smooth remove the pan from the heat.
4. Add 175g of biscoff spread and gently melt into the marshmallow mixture, stirring.
5. Add the Rice Krispies to the pan, stirring well to combine. I found this quite hard and used my hands.
5. Press the mixture into the lined tin. Again, I found this easier with my hands than using a spoon.
6. Leave to cool for about 15 minutes. It will go hard.

7. In a small bowl, melt the white chocolate in 20 second bursts in the microwave.
8. In a separate bowl melt 200g of biscoff spread (takes about 15 seconds).
9. Pour the chocolate and the biscoff in a random pattern over the Krispie mix and then swirl with a skewer, or the tip of a knife.
10. Leave to set in a cool place. It might need to be the fridge during the summer.
11. Cut into 16 or 20 pieces.

This recipe could be used to make other versions, using what ever you have in the cupboard. Nutella type spread could be used instead of the biscoff, Coco Pops could replace the Rice Krispies, or different chocolate could be melted on top.
When my mum made them she just used the marshmallow mixture without any kind of spread, and added less Rice Krispies. We didn’t even get chocolate on top but still enjoyed it. We didn’t get much sweet stuff in those days. Kelloggs now makes similar bars to those. At Asda they cost £3.30 for 8. Using own brand items I got 20 squares for about 20p more, and 25 minutes of my time. Without the biscoff type spread they would have been £1.50 cheaper than the bought version. There would still be plenty of rice krispies left, and a bit of biscoff spread, too. Home made often works out cheaper. We are often paying double for convenience when we buy ready made things from a supermarket. Did you eat marshmallow Krispie squares as a kid?
