Mini Trifles

I had been given some short date cream last week. With it I made garlic butter, some icecream, and used the rest to make mini trifles. Trifle was always a pudding served at Christmas or Easter. Mini trifles sell at a price of £1.59 to £3.10, for 3, depending on the store that you buy them from. Mini trifles are so easy to make and have a retro feel.

I already had left over custard in the fridge, and some Swiss roll. Making this for dessert was a no brainer.  You don’t need a lot of any of the ingredients if you make mini trifles rather than a large trifle inca bowl. I made 4 trifles   in small drinking glasses.  Usually I make them with raspberries from the garden, but I couldn’t find them in the freezer.  I therefore used a few peaches out of a cheap  can, and froze the rest to make chicken and peaches. The peach juice I saved to use later. Using up canned peach syrup

Ingredients

Sponge or jam swiss roll

Fruit. I use raspberries or peaches

1 pkt sugar free jelly crystals. I used strawberry.

Home made custard, or a tin, or carton can be used.

Whipped double cream.

Sherry, optional

Method

1. Put some bit of sponge in the bottom of the glass.

2. Pour on some sherry if you are using it, and let it soak into the sponge.

3. Shop up your fruit, and add to the glass. As you can see, you don’t  need a lot.

4. Make up the jelly by putting the crystals into a bowl and adding half a pint of boiling water. Stir to dissolve the crystals. When dissolved, add half a pint of cold water and stir.

5. Pour the jelly over the fruit. It wants to come ablout half way up the container. I had enough for the 4 trifles and to make my grandson a couple of jellies.

6. Leave the jelly to set but don’t  put it into the fridge until it is cool.

7. Add some custard on top when the jelly is set.

8. Finish off with a layer of whipped cream. The trifle can be decorated with grated chocolate, a glace cherry, or sprinkles for a retro look.

I have some lids that fit on the glasses as they are old Nutella containers. We have had them about 30 years. If I didn’t  have these I would put cling film or something over them when storing in the fridge.

I also like to make Easy chocolate trifle. The trifles last in the fridge for 2 or 3 days. Do you still make trifles, or are they too old fashioned now?
