I am in a hurry today as I am baby sitting early, and so I am just reposting a recipe that I have shared before, and I have shared to our Simple, frugal life private group recently. It is refreshing in the warm weather and a reasonably healthy snack. I am going to stop posting on this page at the end of the month and just concentrate on the group as we have had a few scammers interacting with people on here recently. I made these lollies with the glut of raspberries in my garden. I have not tried them with other fruit but I think they would work. I might try them with a tin of pineapple some time as that would be like a Caribbean combination, or maybe mashed and strained blackberries later in the year. I might even try them with cocoa and mint essence. These lollies are good for adults or children and have become a favourite in our house.
Lollies recipe
- 300g Raspberries
400ml can of coconut milk
150g probiotic yoghurt
1 tsp runny honey
Juice of 1/4 lime (I have used lemon juice)
Place all the ingredients in a blender until they are smooth. Pour into ice lolly moulds. Freeze over night.
Enjoy.
