We needed some cheap, quick, biscuits the other day when I was proving my bread and so I made these almond biscuits. They are based on a recipe by Mary Berry, except that I added some almond essence to have a something a bit different. I guess that you could add any flavour that you like. I have made them taste orange when I made them a few years ago. This made 16 biscuits
Ingredients.
20z sugar
20z butter
5 oz self raising flour
Drops of almond essence. I put in a small cap full
Method
- Whisk the room temperature butter until almost white and creamy.
- Add the sugar and whisk again.
- Gradually add the flour. Mine seemed very dry to start with but it came together when I used my hands.
- Divide into 16 small balls.
- Place on a greased trays. I used a silicone mat but you could use grease proof paper.
- Flatten every ball with a fork. They spread out and so don’t put them too close together.
- Bake in an oven at 180 degrees centigrade for 10 to 15 minutes.
- They should just be starting to go golden brown at the edges and will still be soft.
- Leave to harden on the tray, and then transfer to a cooling rack.
- Store in an airtight tin.
