I put this recipe in the simple, frugal life group (link in the comments) a few weeks ago and it went down well and so I thought that I would share it here. The recipe is for 4 but I will often use 1 fillet of salmon for 2 of us. I always buy whole salmon when they are half price at Christmas or Easter, and cut them into fillets to freeze.
When the children were home I used to make a lot of skewer kebabs as I could make one chicken breast with some vegetables feed 3 of us. You can put mushrooms, courgette, pepper or anything that will grill quickly. This picture has pineapple on but it was the only picture I had. Peaches are nice with chicken too.
Recipe
2 fillets of salmon, skinned
1 red onion
Half a courgette
Half a cup of olive oil
Juice and zest from 1 lemon
2 tsp chopped fresh thyme leaves
2 tsp ground oregano
1 tsp ground cumin
A mild chilli, chopped(or half a spoon of lazy chilli)
1 tsp ground coriander
- In a bowl whisk all the ingredients together except the salmon and the onion and the courgette.
- Chop the salmon into 1 inch chunks.
- Chop the courgette into thick slices and the onion into chunks.
- Put the salmon and the veg into the marinade and place in the fridge for at least an hour.
- Place the salmon and veg on to the skewers (pre soak in water if using on a BBQ)
- Cook for 10 to 15 minutes on a grill, in an airfryer, or on a BBQ, turning and reapplying the marinade if needed.
They were lovely and reminded me of being abroad. The herbs in my garden are making such a difference to the taste of my food this year, and we are using them every day. How are you using your herbs?
