I make these when I want a treat but am trying to be healthy. I think they look quite posh too and sometimes gift them to my daughter who prefers more healthy treats. There are always lots of dates discounted after Christmas and the new year, and I am often on a diet after the Christmas excess eating, and so I usually make a lot then and freeze them then.
Recipe
Dates, either fresh with the stone taken out, or those you buy for baking.
Peanut butter (good quality one if you can afford, but any is ok)
Dark chocolate, melted (the higher the cocoa content the healthier they are but the cheap supermarket ones are ok)
Chopped nuts for decoration (I used 3 walnuts for a batch).
- Slit the date carefully
- Place the peanut butter inside
- Roll in the melted chocolate and place on parchment paper.
- Sprinkle chopped nuts on top.
