This recipe reminds me of many happy holidays in Greece when I was younger. We serve these on their own or with potato wedges and salad. It is lovely on a hot day and a real treat. We have used this recipe when entertaining as well. This serves 2 and so you can double the recipe if you are making a meal for 4. If you do not have all the spices for the marinade, it is nice with just oregano. Just add a bit more than the recipe.
Ingredients
1 large chicken breast or up to 500g of thigh meat.
Marinade
Half a cup of Greek yoghurt
Juice of half a lemon
1 tbsp olive oil
1 tbsp of apple cider vinegar or red wine vinegar
2 medium cloves of garlic, minced.
Pinch of salt and black pepper
1/2 tbsp of oregano
1 tsp sweet paprika
1 tsp ground coriander
1 tsp ground cumin
Tztaziki
A cup of Greek Yoghurt
A third of a cucumber, peeled and grated with the water squeezed out
1 small clove of garlic, minced
A heaped tsp of fresh minced mint
Grated zest of half a lemon
1 tbsp of lemon juice
Salt and pepper to taste
Extras
1 tomato sliced
A quarter of a cucumber peeled and sliced
1 red onion slice
(lettuce and raw pepper is optional. I just add what ever I have)
Pitta bread or wrap per person
Method
- Add all of the marinade ingredients to a bowl, and mix together
- Cut the chicken into strips
- Add the chicken to the marinade and ensure that it is all covered and coated.
- Cover and place into the fridge for at least 30 minutes. (I do mine over night)
- Make the Tztaziki sauce by adding all of the other Tztaziki ingredients into the yoghurt and stir to mix
- Cook the chicken in the air fryer or in a pan with a small amount of oil. It should be golden brown. I cooked mine for about 6 minutes in my air fryer but checked that it was done with my meat thermometer. Depending on the size of your strips and your kind of air fryer the timings could be different.
- Warm the pitta or the wrap and slice the pitta to make a pocket if using one.
- Spread the Tztaziki sauce on the wrap (or in the pitta), add the chicken strips and then the salad. Mr S likes his sauce on top.
- Add some more Tztaziki if required. Mr S always adds far too much as far as I am concerned. I just like a splatter on mine.
All you need now is a glass of Ouzo!
I’m always tempted to cook one chicken breast per person but this is a great idea for making one big one go further.
The chicken breasts these days are huge. I can generally use one in a casseroles and it’s plenty. I substitute thighs quite often because they are cheaper.
