Air fryer Spanish Omelette

We had an air fryer Spanish Omelette for breakfast this morning as I was trying to use up bit and pieces in the fridge, including some previously boiled new potatoes left over from dinner a couple of days ago.  Spanish Omelette usually has some cooked potatoes in it but besides that you can put what ever you want in it. It is more or less the same as a frittata.  This fed two of us.  A Spanish Omelette can also be made in a frying pan or in the oven, but the timings will be different. I used a glass pie dish.

Ingredients for mine

3 eggs (more if you want to make a bigger omelette)

6 small new potatoes, already cooked

A quarter of a pepper

Half a small courgette

Oil for frying

A small onion

2 small slices of ham

1oz grated cheese

salt and pepper to season

Pinch of mixed herbs.

Butter to grease the dish

Method

  1. Grease the dish with butter or margarine.
  2. Chop the onion, pepper and courgette up and lightly fry.
  3. Chop the ham up into small pieces and grate the cheese.
  4. Slice up the cooked potatoes.
  5. Put the cooked vegetables, ham and potato in the bottom of the dish and spread evenly.
  6. In a jug, whisk up the eggs and add the cheese, salt and pepper and mixed herbs.
  7. Pour the whisked eggs over the vegetables
  8. We cooked it in the air fryer for 5 minutes on high.  Cooking time may vary depending on the machine and the amount of eggs used.  It is easy to test it is cooked by using a skewer or knife and pressing either side of the slit.  No liquid should come out.
  9. Serve hot or cold.

We served ours with some baked beans that were languishing in the fridge but usually I would serve it with salad.  This is an easy meal to make and is a tasty way to use up the bits in the bottom of the fridge (fridge gravel).

    In a Ninja Air Fryer, we tried it at 200 c for 6 minutes. Think it would be better at 180c for 7 minutes. Otherwise, great.

      Yes all air fryers are different, I guess. I tend to air fry everything on high rather than bake. Thanks for your feedback. It might help others
