A memory came up on my FB from 2 years ago when we made short bread to take as a present to my great, great aunt, and for the neighbours who had been keeping an eye on Mum’s house whilst we took time emptying it after she had died. I was also meeting my brother there who has a sweet tooth. I thought that it would be something for him to munch on.
I remember I had wanted to make some ‘Twix’ biscuits for a long time, and so with that in mind, I cut 10 circles of shortbread undecorated and we finished them off into Twix biscuits. Both my Aunt and my brother have passed away since, both quickly, within a couple of months of each other, and both with cancer. I thought that I would make some of these biscuits today and give them to family as a nod to them both. If you want to make them you will need some cooked shortbread biscuits, the ingredients for the caramel recipe, and 150g of chocolate for topping (dark, milk, a mixture, or even white).

CARAMEL RECIPE
125g sugar
75ml double cream
1.5 tbsp butter, cubed.
3 drops of vanilla essence.
Method
1. Put the sugar in the pan over a low heat to melt. Do not stir or you will spoil it.
2. In a separate sauce pan bring the cream to boiling.
3. The sugar will start to crystallise and go darker round the edges. When it is a golden brown colour and all of the sugar has melted, stir with a spatula.
4. Slowly pour the cream into the melted sugar, a bit at a time, whilst stirring. It will bubble up.
5. Add the vanilla and keep stirring for a minute.
6. Take off the heat and stir in the butter.
7. Leave to cool for a few mins, but not too long, and spoon a circle on to the already cooked short bread biscuits. (It probably was enough for 12 biscuits)

8. After half an hour, break up the chocolate and melt in a bowl in the microwave, stirring every 20 seconds.
9. Place the melted chocolate over the caramel. I used 1.5 bars of 30p at the time Aldi chocolate. I think that they are about 50p now,
They tasted gorgeous and the caramel stayed slightly soft but not runny. I used a heavy bottomed pan so that the caramel didn’t burn and kept the heat at it’s lowest whilst cooking. You could add salt to the caramel if you wanted to.

Twix and similar chocolate treats are becoming very expensive now. Making my own may not work out much less expensive but at least I know what is in them. The ones that I am making today will have some darker chocolate to make them healthier. I am putting a picture of the patterned shortbread, wrapped, to show how just wrapping a few pieces can make a nice, relatively cheap, present. I also put these in my hampers at Christmas. I bought the bags from The Works. I think that they are about £1.50 at the time of writing this blog but were £1 then. Luckily I still have a stash for this Christmas.
