I preserved a lot of pumpkin puree this week from pumpkins that I bought at cheap prices during Halloween. I hate waste of any kind and so decided to make a snack with the seeds from inside. I am trying to eat healthily and so thought that these would be a great alternative for when I fancied crisps or nuts.
You can roast the whole seed. They might look different from the pumpkin seeds that you see in the shops but this is because they still have the shell on. The inside kernel is green. Eating them whole improves your nutrition as they are full of zinc, phosphorus, potassium, iron and magnesium.
Ingredients
The seeds from inside a fresh pumpkin
Oil (Olive or any oil)
Spices of choice (smoked paprika, chilli, curry etc)
Method
- Put the seeds into a colander and wash to remove any pulp.
- Boil in salt water for 10 minutes (this stops them from being as tough)
- Dry thoroughly.
- Mix with oil (I used olive) and spices (we used Fajita seasoning and salt but you can use smoked paprika, black pepper , chilli , etc)
- Cook on a tray in the oven at 175C for between 10 and 15 minutes, tossing the seeds after 5 minutes so that they do not burn. The seeds should be a golden colour and have a nutty smell.
- I cooked mine in the air fryer at 180C for slightly less time.
These will store in an air tight container for at least a couple of weeks. If I am honest, they are not as nice as nuts or crisps, but they are a healthy alternative to other snacks that are bad for me. 30g is about 140 calories if you are counting.
I love roasted pumpkin seeds, but don’t like the shells.I find it kills the taste of actual seed.I lightly roast mine in the oven, or dry on parchment paper on the radiator, and peel them as I eat. It also means they last longer as it takes time to shell them😁. I love pumpkin seeds.
