No bake healthy ‘Snicker’ type snack

My mission to avoid the supermarket and spend as little money on food as possible, continues.  I am using up what I already have.  We are not baking as much now a days, in an effort to save on energy, and be healthier.  I therefore raided my baking cupboard to make these no bake healthy ‘Snicker’ type bars.  They used to be called ‘Marathons’ when I was a kid, and changed their name in the 80s.

Ingredients

1 cup of rolled oats

1/4 cup of chopped mixed nuts (I had Brazil nuts, hazelnuts, and almonds)

1/4 cup of pumpkin seeds

1/4 cup of sultanas (other dried fruit like cranberries could be used)

1/2 cup of smooth peanut butter (I use a good quality one without added sugar)

3 heaped dessert spoons of pure honey

150g (or less) of chocolate (I used plain)

Method

  1.  In a bowl combine all of the ingredients except the chocolate.
  2.  Make sure that they are fully incorporated and then press into a prepared tin (I just put a silicone sheet in to the bottom but you could just grease it, or put parchment paper into it).
    Add a little bit more peanut butter if it will not hold together.
  3. Melt the chocolate in the microwave, checking every 20 seconds and stirring.  I only had 95g of chocolate and so I added a tsp of coconut oil to stretch it.
  4. Spread or drizzle over the top of the mixture.
  5. Place in a cool place to set for a couple of hours.
  6. Slice into squares or bars.
  7. Store in an air tight container

These hit the spot when I need a sugar hit, or have a craving, and my grandson loves them.  The chocolate bars that we buy over the counter are full of additives and rubbish nowadays. and so it is good to have something reasonably healthy in the cupboard.  It was also a good way to use up all of the little bits in the packets.  You could  throw in other ingredients like chia or sesame seeds, or sunflower seeds, or what ever you have in.

    I’m just about to see if I have the ingredients in for this.

    Hope you don’t mind me asking but is it 20 minutes for the chocolate in the microwave? I don’t have one so will likely stir it over a bowl of water and I know it always cooks quickly. Don’t want folk burning their choccie. Hope you don’t mind me asking.

    I’m definitely going to try this I don’t think I have any peanut butter but have almond butter that needs using up . I’m presuming it’s 20secs melting in the choc ? I’ve got cashew & peanuts I can add to give it the snicker twist . X

    Omg ….love these. Made them last night ….well at least I started to. My honey had crystallised. I warmed the jar in a pan but thought I’d overdone it because I did it so quickly. A video on YouTube mentioned heating for 1.5 hrs on a low heat but I’d whacked the heat up. Left the jar overnight having mixed everything else in the bowl, thinking I was going to have to get a new jar of honey. When I got up this morning, most of the jar had settled clear with only some crystallisation at the bottom. I tried it for taste and it was fine, so I continued with the process. Went out with the great nephews and grand daughter to the large library and then a bite to eat as a half term treat. Came home, well and truly whacked so settled down with a coffee, 2 painkillers and a slice of this. Love, loved, love it. Thank you for posting this Toni. I will be popping the recipe in my book so I have it to hand for future use.
