Chocolate cookies

A number of weeks ago, I was just as I was starting to do well with my healthy eating. Mr S came home with a 10kg box of chocolate aero mint balls for £8.  He buys himself a box of chocolates each month. It worked out that he would be saving a lot of money as they would last a year.  I am terrible if chocolate is in the house and so he has had to hide them.  Last week he made some lovely chocolate cookies and chopped some aero mint balls up in them.  Most chocolate sweets could be used, and I have added chunks of chocolate in the past.

Ingredients

200g of butter

400g of sugar

2 eggs

440g of Self Raising flour

60g cocoa

Any chocolate sweets that you want to add.

Method

  1.  Preheat the oven to 170C
  2.  Cream the butter, eggs and sugar together in a mixing bowl.
  3.  Stir in the flour and the cocoa
  4.  Add any chopped sweets and incorporate well
  5.  Roll the mixture into balls and place onto a greased or lined baking tray
  6.  Press down with a fork
  7.  Cook for around 10 to 15 minute (they will still be soft)
  8.  Leave them to cool for 1o minutes before placing them on to a cooling rack.

This recipe made about 30 cookies.  They store well in a tin.  We took ours on a break away and shared them with family. They were still nice 6 days later.  They are not particularly healthy, but are nice as a treat.  We have Easter coming up.  I bet that they would be nice with mini eggs in them!  They will also make a nice frugal treat for Mother’s Day which is at the end of the month.  Just pop them into a box with a ribbon, or a nice recycled tin.

I seem to have deleted my pictures that show them on a tray.  They do spread slightly and so a gap is needed.  Mr S has promised to make me some more, and so I will take some more pictures then.
