This is a nice recipe if you have children or grandchildren. We are big kids and so make it for ourselves as well. It can accompany any meal, or be a quick breakfast with an egg on top, or with beans. We like to make things from scratch from what we have. It saves money but also means that my grandson is not eating UPF. This recipe works with or without the potato. We also add herbs or smoked paprika if making it for ourselves.
Ingredients
I medium carrot, grated
I medium potato, grated with the liquid squeezed out (optional)
75g or cheese (I have made it with more and less, depending on what we have available)
1 medium egg
2 tablespoons of Self Raising flour
Big pinch of salt
Butter to grease the waffle machine (or spray oil)
Method
Mix everything together and place a large spoon full on to the waffle plates and close. (It is not liquid and so you don’t get a perfect shape like you do with sweet waffles) Cook for 5 to 6 minutes. With the potato added, it made 4 waffles. We sometimes make double the quantity and freeze them. We then defrost and warm them up in the air fryer for a quick meal.
