Gluten free quiche.

We are trying not to go to the supermarket, and stretch the ingredients that we already have to last another month. I love quiche during the summer but didn’t have any wraps and didn’t want to make pastry. I am saving my flour for other meals. I do have lots of 8p potatoes left and so decided to make a gluten free quiche using those. Any ingredients or fridge gravel can be used to fill the quiche, but I had some bits of bacon to use up and so I made a kind of Quiche Lorraine.

Ingredients

4 to 5 medium potatoes

100g bacon chopped small

3 eggs

Big splash of milk

Cut chives

Salt and pepper to season

Method

  1. Boil the potatoes in boiling water until just soft. Keep the skins on.
  2. Fry the bacon bits.
  3. Put the potatoes into an 8″ greased, flan dish and press down with a glass or jar to smash them.
  4. Ensure the bottom of the dish is covered in the smashed potato and press it up the side as well.
  5. Scatter the bacon on top of the potato.
  6. Whisk together the eggs milk, and chives together in a jug, season with salt and pepper, and pour on top of the potato.
  7. Cook in the oven or airfryer until the quiche has set. Mine took 16 minutes in my air fryer.
  8. I served mine immediately with salad.

We really enjoyed this and it was nice and filling. It is a great way for someone who is gluten free to make a quiche. Next time I am going to try it with tuna and cheese. This made us too lunches. We warmed it up in the microwave the second day and so I am not sure what it is like cold.

      It was so easy and more substantial and so I didn’t feel like I had to make chips or anything to accompany it.

      I must try making a quiche with potatoes, it looks lovely. I have been using wraps as they are less fattening than pastry. I usually have them hot and what is left gets eaten cold the next day.

        Yes I use wraps sometimes too as it is easier than making pastry. I didn’t have any and have so many potatoes and so I thought I would give it a try. Thanks for sharing

    Deffo going to try this! I learned to make quiche at school during what was called domestic science back then haha, long time ago. I’ve loved it ever since. I have also tried your quiche using a wrap a few times, also really good xx
