We are trying not to go to the supermarket, and stretch the ingredients that we already have to last another month. I love quiche during the summer but didn’t have any wraps and didn’t want to make pastry. I am saving my flour for other meals. I do have lots of 8p potatoes left and so decided to make a gluten free quiche using those. Any ingredients or fridge gravel can be used to fill the quiche, but I had some bits of bacon to use up and so I made a kind of Quiche Lorraine.
Ingredients
4 to 5 medium potatoes
100g bacon chopped small
3 eggs
Big splash of milk
Cut chives
Salt and pepper to season
Method
- Boil the potatoes in boiling water until just soft. Keep the skins on.
- Fry the bacon bits.
- Put the potatoes into an 8″ greased, flan dish and press down with a glass or jar to smash them.
- Ensure the bottom of the dish is covered in the smashed potato and press it up the side as well.
- Scatter the bacon on top of the potato.
- Whisk together the eggs milk, and chives together in a jug, season with salt and pepper, and pour on top of the potato.
- Cook in the oven or airfryer until the quiche has set. Mine took 16 minutes in my air fryer.
- I served mine immediately with salad.
We really enjoyed this and it was nice and filling. It is a great way for someone who is gluten free to make a quiche. Next time I am going to try it with tuna and cheese. This made us too lunches. We warmed it up in the microwave the second day and so I am not sure what it is like cold.
This sounds delicious and a great alternative to a pastry base. Think I’ll have to try this!

It was so easy and more substantial and so I didn’t feel like I had to make chips or anything to accompany it.
I must try making a quiche with potatoes, it looks lovely. I have been using wraps as they are less fattening than pastry. I usually have them hot and what is left gets eaten cold the next day.
Yes I use wraps sometimes too as it is easier than making pastry. I didn’t have any and have so many potatoes and so I thought I would give it a try. Thanks for sharing
