I needed a quick dessert when my daughter and family came for a meal. I couldn’t be bothered to bake as I wanted to spend the day in the garden. I therefore made this quick rhubarb sundae, just before serving.
Ingredients
1/2pt of bought or home made custard.
Rhubarb compote (or stewed rhubarb that has been sweetened).
1/3 packet of ginger biscuits, crushed.
Double cream, whipped.
(optional)
Method.
1. Put some ginger biscuit crumbs in the bottom of a sundae glass.
2. Add a layer of stewed rhubarb making sure that it not too runny.
3. Add a layer of custard.
4. Repeat once of twice more, depending how big your dishes are.
5. Finish with ginger biscuit crumbs, or whipped cream if you have some.
We have eaten this a few times. I like to add a bit of crystalised ginger when cooking my rhubarb for added taste. We always have compote in the fridge and it was a good way to use up left over custard.
Next time I am going to make it with bramble compote, chocolate custard, and malted biscuits, as I have all of the ingredients already. Which combinations would you put together?

Ooh, this sounds great.
I think a shortbread, strawberry compote, and Greek yoghurt combination would work nicely too. A great seasonal dessert to use up things you have.
Your Lemon Posset recipe is a firm favourite in our house now :) Sometimes we have it with cream and a raspberry on top, other times just as it is. A 300ml pot of double cream makes 4 puddings for us as I tend to use those GU glass pots. Thank you for sharing your recipe.
