Air fried courgettes is a fairly new way to cook courgette for me. I had seen it on a couple of videos on Youtube. Mr S loves it, and it is quick and easy. As we grew our own courgettes, chillies, and tomatoes, it makes a cheap lunch. I don’t really have much money to allocate ingredients for lunch, and so it is often left overs or things from the garden.
Ingredients
1 largish courgette per person
Oil (I used Olive)
Chilli flakes
Tomatoes
Cheese of choice
Method
1. Using a peeler with the spikes (serrated), slice the courgette, thinly (like long match sticks).
2. Place in a bowl with a little olive oil in, sprinkle on chilli flakes, and season with some salt and pepper, a mix.
3. Air fry on 200⁰C for 10 minutes. I moved mine around about 4 times to evenly cook it, or else the outside will burn.
4. Add some chopped tomatoes and crumble or grate some cheese on top. I used Feta as I had half a pack left from making the Greek pie. Parmesan would have been nice, too.

5. This air fried courgette dish can be used as a side (we have served it with cooked chilli king prawns), or as a light lunch on it’s own. Mixed herbs could be used instead of the chilli.
