These courgette fritters are very similar to the courgette waffles, but cheaper as no egg is needed. I make these a couple of times a week now that courgettes are in season. They are great to serve as sides, to dunk in sauces if made smaller, or to have for breakdast with a fried egg on top. My favourite way is to warm them up in the air fryer with grated cheese on top and have them as a snack when I am craving crisps or something.
Ingredients
Oil to fry
2 medium courgettes
Salt (a big pinch)
1 tsp of mixed herbs (I use a bit more)
1 cup of chick pea flour
Method
1. Grate the courgette (skin and everything)
2. Mix in the cup of chickpea flour (if it feels slighty dry I will massage it in with my hand).
3. Heat a drizzle of oil in a pan and fry on one side until golden.
4. Using a spatula turn it over, flatten it down with the spatula, and fry the other side until golden.
5. Serve warm, or allow to cool and store in the fridge for up to 5 days. I use a silicone bag or an airtight box. This makes 4 fritters and so I usually make a double batch.
