I don’t like mayonaise but like the thought of eating a slaw. We were having family around for a meal and I wanted to make falafels in wraps and needed something else to put in them. I therefore made lemon slaw. This would be a good, frugal, healthy side dish to make in the winter when cabbages are in season and cheaper. They are often 15p or less at Christmas here in the UK.
Other vegetables can be added or substituted. Apple, celery, onion and beetroot would be nice to add.
Ingredients
Vegetables
1/4 medium red cabbage
1/4 medium green cabbage.
2 fairly big carrots.
Dressing
1/4 cup of olive oil
3 tbsp lemon juice
1 clove of garlic, crushed
1/2 teaspoon of cumin or ground corriander.
1/2 tsp salt
Method
1. Finely julienne the carrots and chop the cabbage thinly.
2. Mix the vegetables in a bowl.
3. Make the dressing by mixing all the dressing ingredients together.
4. Pour the dressing over the slaw just before serving, and mix through thoroughly.
You are basically just adding a salad dressing to slaw. Therefore any of your favourite salad dressings could be adapted. I have kept mine in a glass lidded dish in the fridge for up to 5 days. It was still crunchy. We use it as a side, but I also love it in a hummus sandwich for lunch. I feel like I am eating something substantial as well as tasty. Do you use anything besides mayonaise to make slaw?
That sounds lovely, I only ever use Mayo in slaw my partner would eat it everyday if I made it. When I get some olive oil next I will give this a bash snd see what he thinks. Thanks

Yes I like it as it is light. I am not keen on dairy. I call mayonaise coleslaw ‘cat sick’ when Mr S has it. 😁
I usually use yogurt but the option you suggest sounds very good.
I am not keen on dairy and so is better for me but yoghurt is a good idea.
I like to mix Greek or homemade yogurt with a bit of olive oil, vinegar (love Aldi’s balsamic) or with tahini (a jar of this lasts me ages!) plus any herbs I have. It’s a lighter dressing than mayonnaise.
Good idea, and I bet Mr S would like it.. I just don’t like dairy in mine and so tried an alternative.
Looks delicious! There’s something quite satisfying about a fresh bowl of healthy raw vegetables (salad or slaw) to crunch. It feels as though you are eating more than if e.g. you took the same ingredients and made them into a soup.
