Cheese, onion, bacon potato layer bake

This potato, cheese, onion, and bacon layer bake is a meal that my family and I like to eat when we have lots of potatoes. It is tasty without bacon, but family were coming for a meal the other day, I had some bits of bacon mishapes to use up, and I wanted to make it special.

I am not going to put exact  amounts as it depends on the size of your dish and the amount of people that you are serving. Enough potatoes and sauce are needed for at least two layers of the dish, but I try to do 3 layers to make it deeper. I used a large dish and fed 5 (with some vegetable sides).

Ingredients

Potatoes (I used 7 medium to large ones.

Onions (2 smallish ones for mine)

Bacon bits

Cheese sauce (I made almost a pint)

Method

1. Fry the chopped bacon and onion.

2. Peel and slice the potato thinly and cook in boiling water for 3 minutes. Drain the potato slices immediately.

3. Grate the cheese and make the cheese sauce (packets are ok).

4. Put a layer of potatoes on the bottom of the dish, and then using half of your onion and bacon (if making 3 layers) spread it out over the potatoes.

5. Pour a third of the cheese sauce over the this layer.

6. Put a layer of potatoes on top and repeat with the bacon, onions, and cheese sauce.

7. Put the last layer of potatoes on top

8. Pour the last amount of sauce over it, and sprinkle with a bit of cheese.

9. Cook in the oven or air fryer at 180⁰C. It should be slightly brown on top.

10. My large dish took 40 minutes but a small dish would take less time.

I have made this with a tomato based vegetarian stew in between the layers, chicken in a white sauce, or with mince. We eat it a lot when the cheap Christmas potatoes are on sale. If you have no potato you could make it with pasta sheets like a lasagne.

When potatoes were cheap it was a frugal meal, and it still is if you grow your own, or can get some free, or cheap from some source. My family really enjoyed the meal, and my daughter said that she is going to make it in the future.
