I love cous cous. It is so quick to make. Today we had some bits and pieces to use up from the freezer and so I made spicy summer cous cous to accompany them. I am not putting amounts as it depends on what you have in and how many you are serving.
Ingredients
Cous cous
Taco or fajita seasoning. We make our own. (Press Chicken Fajitas link)
Tomatoes red or yellow
Pepper of any colour
Spring onion (optional)
Chilli (optional).
Chick peas and kidney beans (optional)
Method
1. Put the cous cous in a bowl with the seasoning. Any seasoning can be used but we like ours spicy.
2. Pour boiling water over the cous cous so that it is just covering.
3. Wait 5 or so minutes for it to be absorbed and then mix and fluff up with a fork.
4. Mean while cube your tomatoes and pepper (and any thing else you need to).
5. Once the spicy cous cous is fluffled, gently stir in any other ingredients that you wish.
6. This keeps in an air tight container in the fridge for 3 to 4 days.
We made this for a family buffet recently and it is a quick, easy side that will use up your fridge gravel. We often have it for lunch.

love the idea of using the fajita mixes. usually I just use veg stock but this gives it more zing. thanks for the suggestion, guess what I’m having for tea tonight….x
Yes we always find it bland using just stock. We love spicy food and so it was a no brainer.
