Raspberry yoghurt ice cream

During this hot weather, we like to eat ice cream every day. How ever, it is expensive to buy the cream and the condensed milk that we need. We therefore make ice cream using the home made yoghurt we regularly make, and this week we are using some of our glut of ice cream. I make this recipe into lollies for my grandson, or put it in a recycled take away container in the fridge.

We actually don’t measure anything and make the amount we want. I have given you a recipe, though. We added some chocolate bits to ours, with the yoghurt, to switch it up a bit. A friend gave me a big bag full and we are using them in everything.

Ingredients

300g of raspberries

150g of yoghurt

2 tablespoons of runny honey (I add icing sugar to taste if I don’t have any).

Method

1.Mash the raspberries with the icing sugar or honey.

2. Fold in the yoghurt.

3.Put into lolly moulds and add sticks, or freeze in a container.

4. Freeze overnight.

Sometimes I swirl through some peanut butter instead of adding the chocolate, though it is still  nice plain, with just the raspberries. This makes a cheap, but treat dessert using up what we have in the fridge cupboards and garden.
