Simple bread sticks

I was having family over for a meal the other night. We had made various salads, and we had meat on skewers. It felt like the meal needed some carbs. Usually I have some of the part baked rolls to make garlic bread, but we are living out of the cupboards whilst Mr S has been off sick, and so we had used them all. My solution was to make simple bread sticks with what we had in. We had been lucky to get some cottage cheese a few weeks back at The Company shop for 19p a carton. I therefore made them with that.

Ingredients

1 cup of self rasing flour

1 cup of cottage cheese

Pinch of salt

Any addition you want (eg. chopped olives, tomatoes, chopped spring onions, herbs  peppers, etc.) I added raisins and chopped cashew nuts as we had marinated the chicken in curry sauce).

Method.

1. Put the cottage cheese in a bowls.

2. Add the salt. And slowly stir in the flour to form a dough. I actually needed a bit more flour than the recipe I had seen on a tic tock reel. I add flour until it wasn’t sticky.

3. Incorporate any additions you want by gently kneading them in. I did this by flattening the dough, sprinkling them over the top, and folding up and kneading.

4. Shape into bread sticks. Mine were a cigar shape as I didn’t want them too thin.

5. Place on a greased baking tray. Milk wash them.

6. Bake at 200⁰C in an oven or an air fryer for about 10 to 15 minutes, depending how thick you have made them. They should be crunchy on the outside but soft in the middle.

7. Serve hot or cold.

This is going to be a regular addition to our menu, especially our pickie meals. It was so easy. Half were eaten before I even took the picture. It is also a way of adding extra protein to our diet.

    I’m certainly going to give this recipe a try, I think I would add olives as they are a great combination with cheese.
