Mr S loves burgers, especially on the days that he has worked. He would eat them every day if he could. I obviously can’t afford to give him meat ones every day and so I tend to make him them out of what we have. Some of these are vegetarian. As long as I spice them up a bit, he enjoys them just as much. These chickpea burgers are full of protein, and cheap to make. Best of all, Mr S enjoyed them.
Ingredients
1 can of cooked chickpeas (or some you have cooked yourself, around 400g)
1 onion
An egg
Bread crumbs
Spices or herbs to taste (I added garlic powder, a bit of chilli, and smoked paprika)
Splash of hot water
Method.
- Mash the chickpeas with a potato masher. I added a splash of hot water to mine to help soften them, or you could cook them a bit longer before mashing. A bit of texture was left in mine.
- Cut the onion finely and add to the mashed mixture. A chilli could be added here which we will do next time.
- Add the whisked egg and then add enough bread crumbs to bring the ingredients together to make the burger. The amount depends on the size of the egg. I added 2 or 3 ounces. Mine was not sticky to handle.

- Form your patties and fry, or cook on parchment in the air fryer. Mine took 12 minutes. I fried mine for a couple of minutes each side to get them golden and then finished them off in the air fryer.

We served ours in a bun for lunch that day, but had the rest of the batch a couple of days later as a meal with chips and salad. The breadcrumbs that I used were made from out of date bread, given free by a friend from her Olio collection. I toast then in the oven if it is on, or in the air fryer, (or even the sun in summer). The bread crumbs keep in a sealed glass jar for up to a year. When ever I have spare bread that has gone stale, I make a batch that I use for fish cakes, as a savoury topping with cheese and herbs, and on chicken home made chicken goujons, etc. The onion was home grown and so these cost me less than £1 to make. The chickpeas were 39p for the can from a discount supermarket.

They look good, thanks for sharing, we will be giving these a bash. ❤️
I hope you like them
Brilliant
They look good, will need to try these as I have everything in.
I would veganise these with 1 tbsp of chia seeds soaked in a bit of water for 5 mins prior to adding 💚
Good idea. I need to learn to use chia seeds more. I don’t know why but I am a bit nervous of them.
They look lovely! I have a couple of vegetarians in the family, I might make these for us all next time they stay xx
I hope that they like them
I’ll definitely give these a go ,thanks for sharing Toni, I may try adding some tuna as well as an experiment with half of them. X
Great idea. I bet some grated lemon zest in there would be nice with that.
They look good. I will try them on my husband as he likes burgers, thank you.
No worries. We like to spice them up as they can taste a bit plain if you don’t
These look great I will give them a try, really useful when you have a vegetarian friend to lunch
Absolutely. It is nice to be able to make similar meals so that you can all eat together. Putting lots of seasoning in is very important.
Yes. I often make quiche, pizza or veggie pasta or pasties when my veggie friend visits
That looks a good recipe. Another one on the list to try.
Thanks for the inspiration
We are making them once a fortnight now and Mr S likes adding lots of different seasonings.
No worries
These look great – i’m definitely making them soon x
I hope that you like them. The seasoning is important to make them tasty
