Tuna Potato Layer Bake

My daughter asked for a dish with little gluten in it and there were five of us to feed (one a toddler). I actually made this with a couple of fresh salmon fillets as that is what I had, put it would work with a tin of tuna.  I served it with broccoli and carrots and there was a bit of cheese sauce left and so I thinned it down with milk and served it in a gravy boat.

Ingredients

5 medium potatoes

A can of tuna (or canned salmon or fresh salmon)

Vegetables eg peas, cooked broccoli, spinach, leeks or what ever you have in the fridge or freezer (I used leeks and spinach)

Sauce

1oz butter (or margarine)

1oz flour

1/2 pint milk if making a thicker sauce, but you can add more milk if you want a thinner sauce).

Salt and pepper to taste.

20z strong cheddar or other hard cheese.

1 tsp mustard powder

Salt and pepper.

Method

  1. Cut the potatoes into round slices
  2. Boil the potatoes for 5 minutes and then turn off and drain.
  3. Cook any vegetables that you want to add to the dish.  If I was using tuna I would add frozen peas.  I added leeks and spinach as I used salmon and the vegetables were what I had growing in the garden.
  4. Put a layer of potatoes in the bottom of the dish
  5. Add a layer of tuna and vegetables
  6. Put another layer of potatoes on the top and season with salt and pepper.
  7. Put another layer of tuna and vegetables
  8. Finish with a layer of potatoes and season.
  9. Make the sauce by gently heating the butter.
  10. Remove from the heat and stir in the flour and the mustard powder.
  11. Put back on the heat and cook for one minute, whisking. Do not let it brown.
  12. Take off the heat and slowly and gently whisk in the milk.
  13. Bring to boil, whisking, and cook until thickens. Add a bit more milk and whisk if too thick.
  14. Stir in the grated cheese and season to taste.
  15. Pour the sauce over the dish to cover the layers and add some grated cheese on the top if desired.
  16. Cook in an an oven at 160C for 30 minutes or until the top is golden.  It can also be cooked in an air fryer for a shorter time.

Some people will make the sauce without taking it off the heat but this prevents it burning and is a good way to learn

I make this same meal but use different ingredients.  Some times I will use a bit of ham instead of fish.  Other times I will use chicken and make a white sauce.  If I have no cheese I will make a parsley sauce.  I have even done it with some left over chilli in between the potato layers with cheese sauce. In the picture I have just started putting the second layer of potatoes on.
