I am using up all those bits in the freezer that the labels have fallen off as I am decluttering my freezer and shopping from home. I thought that I had cooked pork but it turned out to be cooked ham when defrosted. I had sliced up some pineapple ready to make sweet and sour pork and so I had to quickly think outside of the box. This is what I came up with. Mr S loved it and wants it again. It tastes a bit like Hawaiian pizza. I served it with salad. The recipe is very loose as it is a way of using up what you have.
Ingredients
5 or 7 pancakes, you can find the English pancake recipe here
Some chopped ham (as little or as much as you want, depending on your budget). I had about 4 or 5 ounces which were left over bits of a ham joint.
Some fresh or tinned pineapple (whenever we treat ourselves to a pineapple I always freeze some cubes for smoothies or sweet and sour dishes. I used about 5 cubes on this occasion.
1 onion, sliced
A third of a pepper (or some frozen peas or sweet corn or spinach)
About 2 tablespoons of tomato puree
A squirt of tomato sauce (or 1 tsp of sugar)
1 tsp mixed herbs
Water
Half a pint of cheese sauce ( add grated cheese to this recipe)
A small amount of grated cheese for the top.
Method
- Make the pancakes
- Put the onions and pepper in a small amount of water in the frying pan and let them cook for about 3 minutes. This saves money as you do not need to add oil.
- Add the cooked ham, the pineapple, a big splash of water, the tomato puree and tomato sauce and mixed herbs.
- Stir together and cook for a few minutes. Add more water or tomato puree as required. The mixture wants to be slightly wet but not runny.
- Put to one side with a lid on if possible to keep it warm.
- Make the cheese sauce.
- Reheat the ham mixture for a minute if needed and reheat the pancakes in the microwave.
- In a dish put a pancake, on top put a layer of ham mixture, another pancake and then some cheese sauce. Repeat once or twice, ending with the cheese sauce.
- Scatter a bit of grated cheese on top.
- Cook in the air fryer for 10 to 15 minutes until golden brown on top. (Everything is cooked already).
- Alternatively cook in a 180C oven until golden brown.
I will definitely make this again as it was quite frugal and it would serve 4. I must admit I only used 5 pancakes as I ate the other two with lemon and sugar! If I was making it again I would probably make the pancakes in advance the morning or day before. You could even use wraps if you wanted, instead. I love it when I invent a new recipe.
