Have you noticed that the chicken that you get from the supermarket seems to have a more rubbery texture now? Marinating it in yoghurt makes it more juicy and tender. You can marinate it in plain yoghurt and wash it off before cooking, or you can add spices to the yoghurt and cook it in the marinade to make tandoori chicken which is really tasty.
I usually make tandoori chicken as cubes on skewers, but last week we had chicken drumsticks in the freezer from when we entertained a few weeks back. I don’t like chicken drumsticks much but can eat them like this.
RECIPE
1 small carton or a cup of plain yoghurt (I make my own)
1 tsp ground ginger
1 tsp ground coriander
1 tsp paprika
1/2 tsp ground cumin
1/2 tsp turmeric
1/2 tsp salt
1/4 tsp garlic powder
1/4 tsp chilli powder
2 grated garlic cloves
1 inch of ginger grated.
1 tbsp lemon juice.
Method
1. Mix all the ingredients together
2. Skin the drumsticks
3. Make small slashes in the chicken
4.Marinate the drumsticks in the spiced yoghurt for 3 to 4 hours.
6. Shake off excess marinade.
7. Bake in a high oven, or on a BBQ, grill, or cook in an air fryer. We cooked ours in an air fryer at 180⁰C for 18 minutes.
Some people put red food dye into the yoghurt to make it look more tandoori, but we don’t.
We had ours with home made savoury, vegetable rice ( we added turmeric and tando0ri masala spices to rice with some frozen vegetables before cooking the rice).
