5 chicken marinades

When the weather gets warmer we will be eating more simple and cleaner meals.  Every week we will have chicken with either chips, grains like quinoa, or homemade savoury rice, and a fresh salad picked from what is ready in the garden.  This would be boring if it was plain grilled chicken, and so we try to switch it up a bit by making different flavoured marinades out of ingredients that we have in the cupboard.  These are cheaper and healthier than bought marinades that are full of additives.

These are great for a BBQ, to use for chicken to put on skewers, or to cook under a grill or in an air fryer. All you do is whizz up the ingredients and toss the chicken into it, and leave it in the fridge for a few hours or overnight.  I use a glass dish with a lid to do this or sometimes a silicone bag. These are some that we make regularly.

 

Pesto chicken marinade

1 cup of freshly chopped basil leaves

2 tbsp olive oil

1 clove of minced garlic

1 tbsp lemon juice

Salt and Pepper

 

Curry Marinade

1 cup of Greek yoghurt

2 minced garlic cloves

2 tsp chopped coriander leaves

2 tbsp of lime or lemon juice

2 tsp curry powder

1 tsp cumin

1 tsp chilli powder

salt and pepper

 

Mustard and Honey Marinade

2 tbsp Honey

2 tbsp Dijon mustard

2 tbsp whole grain mustard

1 tbsp olive oil

1 tbsp apple cider vinegar

salt and pepper

 

Cajan Marinade

1.5 tsp olive oil

2 small garlic cloves

1/2 tsp salt

2.5 tbsp Cajan spice

 

Lemon and garlic marinade

2 tbsp olive oil

2 tbsp lemon juice

2 tbsp finely chopped herbs (I use a mix of rosemary, oregano and thyme)

lemon zest (optional but tastes better)

2 cloves of minced garlic

salt and pepper

    Some of those marinades sound lovely will definitely have to try some and put on chicken or fish to have a long side a salad. One think I do eat processed which just came to me is those packets of rices on Aldi,I usually have the ones with the wild rice, quinoa, wholemeal,but probably not that good for me,but I have them for quickness. I’ll do some research on the ingredients in them. I have made BBQ sauce before as I have treacle in my cupboard, and plenty of recipes on line I find them there,but probably not as healthy as the ones you have put here, I must definitely write some of them down and give them a go in the coming weeks.       No worries. Thanks for commenting. Yes I like the BBQ one as well but I am trying to reduce my sugar. We make a savoury rice. I will put it on the next time that we make it as I will need a photo

    Something I use with chicken or pork chops is greek yogurt & orange juice as a marinade .
    Also thinned down yogurt with plenty of sumac is delicious either as a marinade or to drizzle over salad to spice it up a bit or even for dipping
