I get bored with routines or anything that is repetitive. We therefore like to switch up our breakfasts so that we have something different most days. At this time of year I like to use what is in my garden. One of our favourites is this summer garden breakfast. I basically use fridge gravel from the fridge or any worse for wear vegetables that have been grown at home, and turn them into something delicious. You can use what ever you have. Sometimes I will add spinach, spring onions, radishes, and I have even part cooked strips of carrot in the microwave and then added them. I was running out of tomato puree and so only had half of the amount in this. There is usually more tomato sauce. Some times I add chilli instead of mixed herbs and I will add some grated cheese to the egg when I do this. We use this recipe for lunches as well as breakfasts. This fed 2 of us.
Recipe
2 mini courgettes
A quarter of red pepper
1 small onion
2 tsp tomato puree
1 tsp tomato sauce
Mixed herbs to taste (dried or fresh)
1 large egg
2 tbsp of milk
salt and pepper
2 large wraps
oil to cook
Method
- Chop the onion, pepper and courgette into strips and gently fry them in a frying pan until soft.
- Add the mixed herbs as you are cooking it.
- Whilst it is cooking, break an egg into a bowl, season with salt and pepper and add 2 to 3 tbsp of milk. Whisk.
- Cook on high in a microwave for between one and 2 minutes until cooked.
- Once the vegetables are cooked (or at the end of cooking if they are catching on the bottom of the pan) add around 6 tbsp of water, the tomato puree and the tomato sauce.
- Stir through to thicken and coat the vegetables for a minute or so. It should not be runny but be like a thick tomato sauce.
- Put the wrap on to the plate, put the vegetables in the tomato sauce down the middle of the wrap, and half the egg on top. Repeat for the second person.
- Fold the wrap and enjoy.
