Gluten and sugar free apple cake

I am on a quest to eat more healthily. I especially want to cut out sugar. We have an abundance of foraged apples, and I bought some reduced over ripe bananas the other day which I have been using to ripen my tomatoes.  I hate waste and so I thought that I would use one up and try this cake recipe out.  The sultanas and the apples add the sweetness, but if you are worried about it not being sweet enough you could always add a table spoon of honey.

Ingredients

2 medium to large apples

100ml water

70g rolled oats(you can blitz these into a flour if you want, but I didn’t)

1 banana

2 eggs

1 tsp cinnamon

1 tbsp gluten free baking powder (or ordinary if you are not gluten free)

80g sultanas

Method

  1. Preheat the oven to 180C
  2. Grease a loaf tin with butter (and baking paper if you wish)
  3. Wash the apples and core.
  4. Slice up the apples with the skin still on and place in food processor or liquidiser
  5. Add 100 ml water
  6. Whiz until it is as smooth as you can make it.
  7. In a separate bowl, place the oats and then add the pureed apple.
  8. Mash the banana and add to the bowl
  9. Add the eggs
  10. Add the cinnamon and the baking powder.
  11. Stir well to mix all of the ingredients together.
  12. Place the ingredients into the lined loaf tin and bake for 40 to 50 minutes.  Mine was 45 minutes but it will depend on your oven.  I had mine on the middle tray.

This turned out a lot better than I thought it would.  I didn’t expect it to rise but it doubled in size.  It was definitely sweet enough without any honey (and I have a really sweet tooth).  I cut it whilst it was still hot (I can never wait to try recipes!) but it was nice and bouncy and not too stodgy as I expected.  I will definitely make this again.

      To be honest I would rather have a big chocolate cake, but as far as healthy cakes goes, it is nice.
