Apple pie cake

We made this for Mr S the other day as it is low in sugar but does not have any bananas in it (which he hates).  It is a healthy recipe that Mr S learned at college and he now uses for the old folk at his place of work.  It is kind of in between a scone, a cake, and a pie in texture, but was nice.   Again, we are using up foraged apples.  I think that most things that we eat this winter will have an apple theme!  It is a frugal cake to make, especially if you can forage for some apples, as we can.

Ingredients

2 apples

200g of Self Raising Flour

100g sugar

100g butter or margarine

1 egg

Method

  1.  Preheat the oven to 160C (fan) or 180C
  2.  Grease and line a six or seven inch cake tin (with false bottom if possible)
  3.  Chop the apple up into thin slices or small chunks and microwave in a just a splash of water,  cooking until soft,
  4. Mix the sugar and the flour together in a bowl and then rub in the fat to resemble bread crumbs.
  5. Add the egg to bind the mixture together.
  6.  Take half of the mixture and press it down into the bottom of the cake tin.
  7.  Place the apples on top to cover the bottom layer
  8.  Spread the other half of the mixture on top.  I found this quite sticky and so put a bit of flour on the back of a spoon and did it.  In the original recipe it said it could be rolled but ours couldn’t.
  9. Place in the over and cook for 30 to 49 minutes until a skewer comes out of the top clean and it is a slight golden brown colour.
  10.   Leave in the tin for 10 minutes before removing and placing on a cooling rack.

This is nice as a dessert served cold, or is lovely warm with custard. Store in an air tight tin. I froze half of ours, as cakes made with fresh fruit can go mouldy if left for a long time in a tin.

      I can’t see why not, but obviously the middle will not be as sweet. I used one of each and I could have stood it being a bit more sour. I haven’t tried it with cooking apples, though.

      Brilliant. We have found that it goes too soft if left for more than 3 days and so tend to freeze some of it if we do not have company. Thanks for sharing
