We do not eat a lot of meat now for financial, and health reasons, but do still enjoy some simple meat meals with the classical potatoes and vegetables, and sometimes gravy. This is a great way to make one chicken breast feed two people without feeling too deprived. I am not sharing an exact recipe as anything can basically be used to stuff the chicken. When I made it with these ingredients, I added a tsp of paprika. I did not have a lot of the individual stuffing ingredients. The peppers were just a couple left in a jar and I only had a handful of bread crumbs and a little bit of parmesan.
I always add whatever I have, including left over stuffing with dried cranberries around Christmas time. In different seasons I have made it with wild garlic and bread crumbs and parmesan. Another time I had chopped chillies, onions, peppers and cubed bits of tomatoes that were already cooked and stuffed the chicken, and sometimes I added pineapple to this mixture. Mozzarella cheese and tomato puree with herbs in is also good to stuff chicken with. You can be as inventive as you want. The stuffing does not want to be too wet as the juices of the chicken add add moisture.
Ingredients
1 large chicken breast
Roasted red peppers from a jar
A couple of stems from spring onions or some spinach
Smoked paprika
Bread crumbs
Parmesan
Method
- Split the chicken in half (depth wise), not quite all the way through so that there is a hinge.
- Open up the chicken
- Flatten the chicken piece of breast in between cling film (I did it in a large silicone bag), and flatten it using a tenderising hammer or the end of a rolling pin to give it a larger surface area.
- In a bowl put the chopped roasted pepper, chopped spring onion tops or ripped spinach, smoked paprika, bread crumbs and parmesan and mix well.
- Spread over the flattened chicken breasts.
- Roll up from the back and tie with string or a keep together with a cocktail stick. I had some silicone ties.
- Brown in a frying pan with a little oil in it.
- Cook in an oven at 180C for about 40 minutes (this may vary depending on the size of the chicken breast. We have a meat thermometer and check that it is at least 75C when probed. It can also be cooked in an air fryer. This is how I did mine today and I did not brown it first. The temperature was 200C and it cooked for 14 minutes on air fry. I checked it with a meat thermometer to make sure that it was cooked.
We eat chicken but sometimes my dishes get a bit repetitive so I’ll definitely try this. It will be fun working out what to stuff the breasts with.

Yes, we only have bacon on special occasions now, but you can buy nitrate free ones from places like Waitrose. My daughter does but they are expensive. I think that this might become a regular for us with different stuffings
