Stretch sausage and bean pie

It was a use up what we have in the fridge day today. I will often have half a tin of beans in the fridge and one or two of our thicked, cooked sausages. If I served them as a meal with a bit of mashed potato, it would look very mean, and wouldn’t be a proper meal to look forward to. Instead I make a stretched sausage and bean pie using up my fridge gravel.

Of course you could make a quick meal with more sausages and beans and adding a mashed potato thatch on top. I like to switch it up a bit and make it a bit more tasty and interesting.

Ingredients

1 or 2 sausages, sliced thinly

Baked beans (I used half a tin).

An onion

Any veg that needs using up. I had pepper, and courgette. If adding  carrots I cook them in the microwave first).

Mixed herbs (or chilli powder) to taste

Tomato puree

garlic (optional)

Left over mashed potato

grated cheese (optional)

Method

1. Slice your vegetables small.

2. Fry your vegetables in a little oil or lard, and add the sausage just before they are tender.

3. Add the mixed herbs or chilli powder and fry for a few more seconds.

4. Add the beans and about a quarter of a cup of water (or more).

5. The sauce will be a bit too thin and so added tomato puree to thicken it up.

6.Warm your mash up in the  microwave ( you could make fresh).

7. Put the sausage and bean mixture into a dish and place the potato on top. Sprinkle cheese on top if you want.

8. Cooked in the air fryer or oven until the top is browned (everything is already warm and cooked.

9. Serve.

My grandson like his without the veg I use, and so I just add some frozen peas and corn to his. It is a quick, easy, cheap meal to use with left overs. Do you make anything similar?

    Sounds good I think my grandson would love it. My go to is a sausage tray bake, couple of sausages cut up, half an onion left over boiled potatoes plus whatever veg I have left over in the fridge.. peppers are especially good.
