Food from a tin of peaches

Every ingredient is precious to me and I often stretch it to enhance several meals, or courses. That is how I keep my food budget at £750 a year. Last year I bought a tin of peach slices for 28p and put them in my pantry. It is a cheap staple that can turn food into something special. I have a few tins in there as they are such good value from the discount supermarkets. I can also use them in savoury dishes like chicken and peaches 

During the winter I made mini trifles, and cut up 4 or 5 of the slices to put with the sponge before I added jelly. I then froze the rest of the peaches. Yesterday, I took them out of the freezer. Today I have used 3 slices to make scones for a treat. These were made with a cup of home made yoghurt, a cup of SR flour, a heaped desert spoon of icing sugar, and 3 chopped peach slices. I cooked them for around 10 minutes in the air fryer.

I still have 4.5 slices left. These I will halve, and put on skewers with chicken pieces, a green pepper from the green house, and some mini tomatoes for another meal. I put the peach next to the meat as it caramelises into it. The juice will be used with some oil and vinegar to make the marinade for the chicken pieces.

Making do with what you already have saves money, trips to the supermarket, and brings out your creative side. These scones are lovely warm. 😇😊. Mr S has asked for them to be a regular treat. What do you do with a tin of peaches?

    Easy side dish (not necessarily for summer): broiled peaches. Remove from the can (save the juice for another day), put on a baking sheet and add butter, sugar and cinnamon. Put under broiler until warm. Delicious.
    Can also be served with ice cream.

    One peach slice chopped into porridge is enough to sweeten it. Overnight oats made with a little if the juice and a chopped peach slice makes a simple dessert if I’m stuck for something filling and sweet.
