Switching up a tin of cheap rice pudding

This is the third in a series of blogs about what to do with cheap ‘essentials’ cans of food to make them more appetising. I wrote one about a tin of tuna, and one about a  tin of peaches earlier this week. Today I will give you ideas about how to switch up a tin of cheap rice pudding.

It can be so boring eating the same thing over and over again, but many people rely on these tins to feed themselves. If I have to use up basic tins that I have put in my pantry when times are hard, I try to make them different each time we eat them. I actually make my own rice pudding in a slow cooker. However a tin will work the same if you use one.

Fruity bake

Spread the rice pudding in a dish. Dot with jam or tinned peaches, and bake until bubbling. (Can be microwaved). Alternatively put peaches in the bottom of an oven proof dish and cover with rice pudding. Mix some oats and sugar together and sprinkle over the top. Bake at 180⁰C for around 20 minutes.

Chocolate rice pudding

Stir in a few squared of dark chocolate or a spoonful of cocoa powder into the warm rice pudding.

Spiced Brulee

Pour the pudding into ramekins. A bit of cinnamon can be added if liked. Sprinkle with sugar and blow torch or put under the grill.

Cinnamon rice cake

Pour in a beaten egg and a pinch of cinnamon into the pudding. Bake in a medium oven until set.

Peach rice Parfait.

Layer rice pudding and chopped peaches in a glass. Sprinkle some toasted rolled oats on top.

Tropical rice

Stir a spoonful of coconut cream in to cold rice pudding. Top with chopped mango or pineapple, and serve cold.

 

Christmas rice pudding.

Stir some sweet minced meat into rice pudding and heat.

Lemon Meringue rice pudding

Heat the rice pudding and swirl through some lemon curd. Top with meringue made with 100g of sugar and 2 egg whites. Bake in a low oven.  This is nice for a family occasion

Jam Rice pudding meringue

Warm the rice pudding and put it into an oven proof dish. Spread jam over the top.  Top with meringue made with 100g of sugar and 2 egg whites. Bake in a low oven.
