Courgette waffles

We like waffles. We can batch cook them, freeze them, or store them in the fridge to use during the week. We cook different kinds for different uses, but these are a new savoury one for us this season. My grandson likes the colour of them and it is a great way to use up that glut of courgettes.

Ingredients

2 medium sized courgettes

I cup of chick pea flour.

1 egg

Herbs or spices of choice

Salt and pepper

Method

1. Grate the courgette into a bowl.2. Mix in the rest of the ingredients until fully combined. I added mixed herbs and paprika (about half a tsp of each).

3. Heat and oil the waffle maker and, when ready, place some mixture on to the hot waffle plates.

4. Cook until the mixture has started to go a slight golden brown in places. Remove from the waffle maker.

5. Repeat. This made 4 waffle.
These freeze well and will be a new way for us to preserve our courgette, and use up the annual glut.

    We haven’t had waffles for years and don’t have a waffle maker. Would piles on a George Foreman grill work do you think?
    Our courgettes are only just getting to picking size but when we have extra I can try my idea of double sided ridged oval shapes, thank you for the idea.

      Yes they would. It will need greasing well.

    This is brilliant Toni, I’m always looking for alternative ways to use my courgettes and this is a great way to be able to freeze them too. I’ve been intending to get a waffle maker for a while so maybe I’ll take the plunge. What type of waffle maker do you have?

      Just a cheap electric one. It cost me £5 in a sale at B&M a number of years ago. If you have an air fryer you can buy moulds to cook them in that

    I just invested in a toasted sandwich maker that also has waffle plates because our oven grill cost so much to use, and my courgette plant has its first 2 flowers so I’m definitely going to try these

    I’d like to use chickpeas far more than I do. When you say you used chick pea flour, did you make it yourself and if so would you be kind enough to share how you made it. many thanks

      You just grind up dried chick peas. I use a coffee grinder
